🍯 Honey Mustard Chicken with Roasted Asparagus & Cheese (Serves 4)
🧾 Ingredients:
For the Chicken:

4 boneless, skinless chicken breasts (or thighs)

Salt and pepper

1 tbsp olive oil (for searing)
Honey Mustard Sauce:

3 tbsp Dijon mustard

2 tbsp whole grain mustard (optional, for texture)

3 tbsp honey
-
1 tbsp olive oil or melted butter

1 tbsp lemon juice or apple cider vinegar
-
1 garlic clove, minced

Salt and pepper, to taste
Roasted Asparagus:

1 bunch fresh asparagus, ends trimmed

1 tbsp olive oil
-
Salt and pepper

1/2 cup shredded cheese (mozzarella, parmesan, Gruyère, or a mix)
🔪 Instructions:
1. Preheat oven to 400°F (200°C).
2. Sear the Chicken:

Pat chicken dry and season with salt and pepper.

Heat 1 tbsp oil in an oven-safe skillet. Sear chicken for 2–3 minutes per side until golden.

Remove from heat.
3. Mix the Honey Mustard Sauce:

In a small bowl, whisk together mustards, honey, olive oil/butter, lemon juice, garlic, salt, and pepper.
4. Assemble and Bake:

Pour honey mustard sauce over chicken in the skillet.

Arrange trimmed asparagus around the chicken.

Drizzle asparagus with olive oil and a little salt/pepper.

Bake for 15–20 minutes, or until chicken is cooked through (internal temp 165°F / 74°C).
5. Add Cheese:

Sprinkle cheese over the roasted asparagus (and a little on the chicken if desired).

Return to oven for 5 more minutes, or until cheese is melted and bubbly.
