🥩 Chipped Beef on Toast
🧂 Ingredients:
-
2 tbsp butter
-
2 tbsp all-purpose flour
-
1 ½ cups milk (whole milk works best)
-
1 jar (2.5 oz) dried chipped beef, rinsed and chopped*
-
Black pepper, to taste
-
Toasted white or sourdough bread (4–6 slices)
Note: Dried chipped beef is salty — rinsing and chopping it helps manage the salt level. If you can’t find it, you can substitute with thinly sliced deli beef or corned beef, lightly fried for extra texture.
👨🍳 Instructions:
-
Make the roux:
-
In a medium saucepan, melt the butter over medium heat.
-
Whisk in the flour and cook for 1–2 minutes to eliminate the raw flour taste.
-
-
Add milk:
-
Gradually whisk in the milk until smooth.
-
Bring to a gentle simmer, stirring frequently, until the sauce thickens (about 5 minutes).
-
-
Add beef:
-
Stir in the chopped chipped beef.
-
Simmer for another 2–3 minutes until heated through.
-
Add black pepper to taste. (No extra salt needed — the beef is salty enough.)
-
-
Serve:
-
Spoon generously over toasted bread.
-
Optionally, top with a sprinkle of parsley or a fried egg.
-
🍳 Optional Upgrades:
-
Add sautéed onions or mushrooms for extra flavor.
-
Swap some milk for cream if you want it extra rich.
-
Add a pinch of cayenne or paprika for a mild kick.
