📝 Creamy Mushroom Alfredo Chicken with Garlic Potatoes & Broccoli-Parmesan Crust

For the Chicken & Alfredo Mushroom Sauce:

For Garlic Roasted Potatoes:

1.5 lbs baby potatoes, halved

2 tbsp olive oil
-
4 cloves garlic, minced
-
1 tsp dried rosemary or thyme

Salt & pepper, to taste
For Broccoli-Parmesan Crust:

3 cups broccoli florets
-
1 tbsp olive oil
-
¼ tsp garlic powder
-
½ cup grated Parmesan cheese
-
Optional: ¼ cup panko breadcrumbs for extra crisp
🍳 Instructions
1. Prepare the Garlic Potatoes

Preheat oven to 400°F (200°C).

Toss halved baby potatoes with olive oil, minced garlic, rosemary, salt, and pepper.

Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and crisp.
2. Make the Broccoli-Parmesan Crust

Toss broccoli florets with olive oil, garlic powder, salt, and pepper.

Spread on a baking tray, sprinkle evenly with Parmesan and (optional) panko.

Roast in the oven alongside the potatoes for 15–20 minutes until the cheese is golden and the broccoli is slightly crisp.
3. Cook the Chicken

Season chicken breasts with salt, pepper, and a bit of Italian seasoning.

In a large skillet, heat olive oil over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through (internal temp 165°F/74°C).

Remove and set aside. Tent with foil to keep warm.
4. Make the Mushroom Alfredo Sauce

In the same skillet, melt butter and sauté mushrooms until browned (5–6 minutes).

Add minced garlic and cook 1 more minute.

Lower heat and pour in heavy cream. Stir in Parmesan and Italian seasoning. Simmer gently until thickened, about 5–7 minutes.

Add chicken back into the sauce and spoon sauce over top. Simmer together for 2–3 minutes. Add chicken broth if the sauce needs thinning.
