Slow Cooker Chicken Soup
Ingredients (Serves 6β8):

1.5 lbs (about 700g) boneless, skinless chicken breasts or thighs

3 carrots, peeled and sliced

3 celery stalks, sliced

1 medium onion, chopped

3β4 garlic cloves, minced

8 cups (2 liters) chicken broth (low sodium preferred)

1 tsp dried thyme
-
1 tsp dried parsley
-
1 bay leaf
-
Salt and pepper, to taste

1 tbsp olive oil (optional, for richer flavor)

1 cup small pasta (egg noodles, ditalini, or orzo) or 1 cup cooked rice (optional)

Juice of Β½ lemon (optional, for brightness)

Fresh parsley or dill, for garnish

Add Everything to the Slow Cooker:

Place chicken, carrots, celery, onion, garlic, broth, herbs, and olive oil into your slow cooker.

Season with salt and pepper.

Cook:

Cook on Low for 6β8 hours or High for 3β4 hours, until the chicken is cooked through and vegetables are tender.

Shred the Chicken:

Remove the chicken, shred it with two forks, and return it to the soup.

Add Pasta or Rice (optional):

If using pasta, add it in the last 30 minutes of cooking so it doesnβt overcook.

If using cooked rice, stir it in right before serving.

Finish & Serve:

Stir in lemon juice, adjust seasoning to taste.

Remove bay leaf and garnish with fresh parsley or dill.
