🍅 Baked Tomato Dip
🧾 Ingredients:

1 tbsp olive oil
-
1 small yellow onion, finely chopped

2–3 garlic cloves, minced
-
1 (14–15 oz) can crushed tomatoes
(or use fresh cherry/grape tomatoes, halved – about 2 cups) -
1 tsp dried oregano
-
½ tsp red pepper flakes (optional, for heat)

Salt & pepper, to taste

4 oz cream cheese, softened
-
½ cup shredded mozzarella cheese
-
¼ cup grated Parmesan cheese
-
Fresh basil, for garnish
🔥 Instructions:
1. Sauté the Base:

Preheat oven to 375°F (190°C).

In a skillet over medium heat, warm the olive oil.

Add onions and sauté until soft (3–4 minutes).

Stir in garlic and cook for 30 seconds.
2. Add Tomatoes & Seasoning:
-
Stir in crushed tomatoes (or fresh tomatoes if using).
-
Add oregano, red pepper flakes, salt, and pepper.

Simmer for 5–7 minutes until thickened slightly.
3. Make It Creamy:

Stir in cream cheese and cook until melted and fully combined.

Taste and adjust seasoning as needed.
4. Assemble & Bake:

Transfer mixture to a small baking dish.

Top with mozzarella and Parmesan.

Bake for 15–20 minutes, or until bubbly and golden on top.
Optional: Broil for the last 1–2 minutes to get a lightly browned top.
5. Serve:

Garnish with fresh basil or parsley.

Serve hot with crusty bread, baguette slices, pita chips, or crackers.
