🍓 Strawberry Shortcake Cheesecake Rolls

🧾 Ingredients:
Dough (2 options):
Option 1 – Quick (store-bought):

1 pack refrigerated crescent roll dough or pre-made cinnamon roll dough (with or without icing)
Option 2 – Homemade Yeast Dough:

2 ¾ cups all-purpose flour

¼ cup granulated sugar
-
1 packet (2 ¼ tsp) instant yeast

½ tsp salt
-
½ cup warm milk (110°F/43°C)

¼ cup butter, melted
-
1 egg
Cheesecake Filling:

8 oz cream cheese, softened
-
⅓ cup granulated sugar
-
1 tsp vanilla extract
Strawberry Filling:
-
1 cup fresh strawberries, diced
-
1 tbsp sugar
-
1 tsp lemon juice
-
1 tsp cornstarch (optional, for thickening)
Shortcake Crumble Topping:

½ cup vanilla sandwich cookies (like Golden Oreos), crushed
-
2 tbsp butter, melted
-
1 tbsp strawberry gelatin powder (Jell-O)
Optional Glaze:

½ cup powdered sugar
-
1–2 tbsp milk
-
Splash of vanilla

1. Make the Dough (Skip if using store-bought):

Mix warm milk, sugar, and yeast. Let sit 5–10 min until foamy.

Add melted butter, egg, flour, and salt. Mix and knead until smooth.

Cover and let rise 1 hour or until doubled.
2. Prepare Cheesecake Filling:

Beat cream cheese, sugar, and vanilla until smooth and fluffy. Set aside.
3. Cook Strawberry Filling:

In a small saucepan, combine strawberries, sugar, lemon juice, and cornstarch.

Cook over medium heat until thickened (5–7 minutes).

Let cool completely.
4. Assemble the Rolls:

Roll dough into a rectangle (~12×16 inches).

Spread cheesecake filling evenly, then spoon on strawberry mixture.

Roll up tightly from the long side, then slice into 10–12 rolls.

Place into a greased baking dish.
5. Bake:

Preheat oven to 350°F (175°C).

Bake rolls for 20–25 minutes or until golden and cooked through.
6. Make Shortcake Crumble:

Crush vanilla cookies in a zip-top bag.

Mix with melted butter and strawberry gelatin powder.

Sprinkle over warm rolls right out of the oven.
7. Add Optional Glaze:
