🇮🇹 Italian Grilled Chicken Marinade
🕰️ Marinate Time: 30 min – 12 hours
🍗 Best for: Chicken breasts, thighs, or drumsticks (boneless or bone-in)
🍽️ Makes enough for ~1.5 lbs (700g) of chicken
🧄 Ingredients:

1/4 cup extra virgin olive oil

3 tbsp red wine vinegar (or lemon juice)

3 cloves garlic, minced
-
1 tbsp dijon mustard (adds depth and helps emulsify)

1 tbsp honey (optional, for balance)

1 ½ tsp dried oregano

1 tsp dried basil
-
1 tsp dried thyme or rosemary
-
1/2 tsp chili flakes (optional, for a little kick)

Salt & freshly ground black pepper, to taste (start with ~1 tsp salt)

Zest of 1 lemon (optional, for freshness)
🥣 Instructions:

Mix the Marinade:

Whisk all ingredients together in a bowl or shake in a jar until well combined.

Marinate the Chicken:

Place chicken in a zip-top bag or shallow dish.

Pour marinade over and toss to coat evenly.

Cover and refrigerate for at least 30 minutes, preferably 2–4 hours, or up to overnight for maximum flavor.

Grill the Chicken:

Remove from marinade and let excess drip off.

Grill over medium-high heat (400–450°F / 200–230°C) for:

5–7 min per side for breasts/thighs (boneless)

20–25 min total for bone-in cuts

Internal temperature should reach 165°F / 74°C.

Let chicken rest for 5 minutes before slicing.
