🥧 Classic Key Lime Pie Recipe
📋 Ingredients
For the crust:

1 ½ cups (150g) graham cracker crumbs (about 10–12 crackers)

⅓ cup (67g) granulated sugar

6 tbsp (85g) unsalted butter, melted
For the filling:

3 large egg yolks

1 can (14 oz / 396g) sweetened condensed milk

½ cup (120ml) key lime juice (fresh if possible, or use bottled like Nellie & Joe’s)

1 tsp lime zest (optional but recommended)
For topping (optional):

1 cup (240ml) heavy whipping cream

2 tbsp powdered sugar

½ tsp vanilla extract
🥣 Instructions
1. Make the crust:

Preheat oven to 350°F (175°C).

Mix graham cracker crumbs, sugar, and melted butter in a bowl until well combined.

Press the mixture firmly into a 9-inch pie dish (bottom and up the sides).

Bake crust for 8–10 minutes. Let it cool slightly while making the filling.
2. Make the filling:

In a mixing bowl, whisk egg yolks for 1 minute until slightly thickened and pale.

Add sweetened condensed milk and mix until smooth.

Stir in lime juice and zest. Mix until fully incorporated.

Pour the filling into the warm crust and spread evenly.
3. Bake the pie:

Bake at 350°F (175°C) for 15–17 minutes, or until tiny bubbles form on the surface and the center is just set (it will jiggle slightly).

Remove from oven and cool at room temperature for 30 minutes.

Refrigerate for at least 3 hours (or overnight) to set completely.
4. Make whipped cream topping (optional):

Beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
