Ingredients:

1 pound (450g) breakfast sausage, crumbled

2 cups (250g) all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder (optional)

1 ½ cups (170g) shredded cheddar cheese

1 cup (240ml) milk

2 large eggs

¼ cup (60ml) melted butter or vegetable oil
Instructions:

Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or use liners.

Cook the sausage in a skillet over medium heat until browned. Drain excess grease and set aside.

Mix dry ingredients in a large bowl: flour, baking powder, salt, pepper, and garlic powder.

Add cheese and sausage to the dry mixture, tossing to coat.

Whisk wet ingredients in a separate bowl: milk, eggs, and melted butter.

Combine wet and dry ingredients, stirring until just mixed (don’t overmix).

Fill muffin cups about ¾ full with the batter.

Bake for 18-22 minutes or until golden brown and a toothpick inserted comes out clean.
