Brown Sugar Glazed Carrots

Ingredients:

1 lb (450g) carrots, peeled and cut into sticks or rounds

2 tbsp butter

2 tbsp brown sugar (light or dark)

1/4 tsp salt (to balance the sweetness)

Freshly ground black pepper, to taste

Optional: pinch of cinnamon or nutmeg for a warm flavor

Optional garnish: chopped parsley or thyme
Instructions:

Cook the carrots:

Bring a pot of salted water to a boil.

Add carrots and cook for 6–8 minutes, until just tender.

Drain and set aside.

Make the glaze:

In a large skillet, melt the butter over medium heat.

Stir in brown sugar, salt, and optional spices.

Cook for 1–2 minutes until the sugar melts and begins to bubble slightly.

Glaze the carrots:

Add the drained carrots to the skillet.

Toss to coat and cook for another 4–6 minutes, stirring occasionally, until the carrots are glazed and slightly caramelized.

Serve:

Season with black pepper and garnish with fresh herbs if desired.
