π° Air Fried Cheesecake Bites
π§ Ingredients:
For the cheesecake filling:

200 g (7 oz) cream cheese, softened

2 tbsp sugar

1 tsp vanilla extract
-
1 egg yolk (optional, for richer texture)

Zest of Β½ lemon (optional)
For the crust/wrapping:

1 sheet puff pastry or 8β10 wonton wrappers

1 tbsp melted butter (for brushing)
-
Optional: 1β2 tbsp graham cracker or biscuit crumbs (if using puff pastry)
Optional coating (after air frying):

2 tbsp sugar + Β½ tsp cinnamon, for tossing

Melted chocolate, for drizzling

Air fryer

Small bowl or cookie scoop
π¨βπ³ Instructions:

Make the filling:
In a bowl, mix cream cheese, sugar, vanilla, and lemon zest (and egg yolk if using) until smooth. Chill for 10β15 minutes to firm up slightly. -
Prepare the wrappers:

If using wonton wrappers: Place a small spoonful (about 1 tsp) of filling in the center, fold into a triangle or purse shape, and seal edges with a little water.

If using puff pastry: Cut into small squares (6β8 cm), add 1β2 tsp filling in the center, fold into pockets or roll into balls. Press edges to seal. Sprinkle a bit of graham cracker crumbs inside for a βcrustβ effect if desired.

Brush with melted butter and lightly spray or brush with oil to get a golden crust.

Air fry:

Preheat air fryer to 180Β°C (360Β°F).

Place bites in the basket, not touching. Air fry for 6β8 minutes, or until golden and crisp. Check around 6 minutes β times can vary slightly depending on size and your air fryer.

Cool slightly, then roll in cinnamon sugar or drizzle with melted chocolate if desired.

You can freeze the assembled, uncooked bites and air fry from frozen β just add 1β2 extra minutes.
