🐔 Air Fryer Chicken Cordon Bleu
🍽️ Serves: 2–4
🕒 Total Time: ~40 minutes (includes prep + cook)
🛒 Ingredients:
For the Chicken Rolls:
-
2 large boneless, skinless chicken breasts
-
4 slices ham (thinly sliced deli ham works great)
-
4 slices Swiss cheese (or Gruyère or provolone)
-
Salt & pepper to taste
-
1 tsp Dijon mustard (optional for inside the roll)
For the Breading:
-
½ cup all-purpose flour
-
1 egg, beaten
-
¾ cup breadcrumbs (panko or regular)
-
¼ cup grated Parmesan (optional for extra flavor)
-
Cooking spray or a little oil for misting
👨🍳 Instructions:
1. Prepare the Chicken:
-
Slice each chicken breast in half horizontally to create 4 thinner cutlets.
-
Place each cutlet between plastic wrap or parchment and pound to about ¼ inch thickness with a mallet or rolling pin.
-
Season both sides with salt and pepper.
2. Assemble the Rolls:
-
Lay a slice of ham and a slice of cheese on each piece of chicken.
-
Optional: spread a little Dijon mustard on the ham before rolling.
-
Roll up tightly, tucking in the sides if possible. Secure with toothpicks.
3. Bread the Rolls:
-
Dredge each roll in flour, then dip in beaten egg, then coat with breadcrumbs mixed with Parmesan.
-
Press the breadcrumbs on firmly to help them stick.
4. Air Fry the Chicken:
-
Preheat air fryer to 375°F (190°C) for 3–5 minutes.
-
Lightly spray or brush the chicken rolls with oil.
-
Place rolls in the air fryer basket seam-side down. Don’t overcrowd.
-
Cook for 16–20 minutes, flipping halfway through, until golden and the internal temp hits 165°F (74°C).
5. Rest & Serve:
-
Let rest for 5 minutes, remove toothpicks, then slice and serve!
🧀 Serving Suggestions:
-
Serve with steamed green beans, garlic mashed potatoes, or a light Dijon cream sauce.
-
For low-carb sides, try roasted asparagus or cauliflower mash.
🌟 Tips:
-
Add a pinch of paprika or Italian seasoning to the breadcrumbs for extra flavor.
-
Want extra crisp? Use panko breadcrumbs and spritz generously with oil spray.
-
Use thin chicken cutlets to make rolling easier and more even cooking.
