Ingredients:
For the chicken:
- 1 ½ lbs boneless, skinless chicken thighs (or breasts if preferred)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tbsp dried oregano
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp onion powder
- Salt and pepper to taste
For the tzatziki sauce:
- 1 cup plain Greek yogurt (full-fat or non-fat)
- 1 cucumber, grated and excess water squeezed out
- 1 tbsp lemon juice
- 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
For the gyros:
- Lettuce leaves or low-carb wraps (optional for serving)
- Sliced tomatoes
- Sliced red onion
- Sliced cucumber
- Fresh parsley (optional for garnish)
Instructions:
1. Marinate the chicken:
- In a bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, oregano, cumin, paprika, onion powder, salt, and pepper.
- Add the chicken thighs (or breasts) to the marinade, making sure they’re evenly coated. Let the chicken marinate for at least 30 minutes (or up to 2 hours for more flavor).
2. Prepare the tzatziki sauce:
- While the chicken is marinating, make the tzatziki sauce. In a small bowl, mix together the Greek yogurt, grated cucumber (with excess water squeezed out), lemon juice, fresh dill, minced garlic, olive oil, salt, and pepper.
- Stir until smooth and well combined. Taste and adjust seasoning if needed. Place it in the fridge until ready to serve.
3. Cook the chicken in the air fryer:
- Preheat the air fryer to 375°F (190°C).
- Place the marinated chicken thighs in the air fryer basket in a single layer. Cook for about 18-20 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown on the outside.
4. Assemble the gyros:
- Once the chicken is cooked, let it rest for a few minutes before slicing it thinly.
- Serve the chicken on a bed of lettuce leaves (as a low-carb wrap) or on your choice of keto-friendly wrap.
- Top with tzatziki sauce, sliced tomatoes, cucumber, red onion, and fresh parsley.
5. Serve:
- Serve the gyro with a side of roasted veggies or a Greek salad for a complete keto meal.
Tips:
- You can add feta cheese for extra flavor if desired, just make sure it fits within your keto macros.
- If you don’t have an air fryer, you can grill or bake the chicken in the oven at 375°F (190°C) for 25-30 minutes.
- If you want more traditional wraps, there are keto-friendly pita alternatives available or you can use lettuce wraps.
These Air Fryer Greek Chicken Gyros are flavorful, easy to make, and packed with Mediterranean goodness—all while keeping it keto-friendly! Enjoy!
