🍋 Baked Greek Lemon Chicken
🐔 Ingredients:

4 bone-in, skin-on chicken thighs or drumsticks (or 2 lbs of chicken pieces)

3 tbsp olive oil
-
3 tbsp fresh lemon juice (about 1 large lemon)

1 tbsp lemon zest
-
4 cloves garlic, minced
-
1 ½ tsp dried oregano (or 1 tbsp fresh)
-
1 tsp dried thyme (or rosemary)
-
1 tsp salt
-
½ tsp black pepper
-
Optional: ½ tsp paprika (for color)

1/2 cup chicken broth or water (for moisture during baking)

Lemon slices and fresh parsley for garnish
🧄 Instructions:

Preheat oven to 400°F (200°C).

In a small bowl, whisk together:

Olive oil

Lemon juice and zest

Garlic
-
Oregano, thyme, salt, pepper, and paprika (if using)

Marinate the chicken:
Pat chicken dry and place it in a large bowl or zip-top bag. Pour marinade over the chicken and toss to coat. Let it marinate for at least 30 minutes (up to 8 hours in the fridge for deeper flavor). -
Arrange chicken in a baking dish or cast iron skillet. Pour any leftover marinade over top. Add chicken broth or water to the bottom of the pan to keep the chicken moist during baking.

Bake uncovered for 35–45 minutes, until skin is golden and internal temperature reaches 165°F (74°C).
Optional: Broil for 2–3 minutes at the end for extra crispy skin. -
Rest for 5 minutes before serving. Garnish with lemon slices and chopped fresh parsley.
