Butterscotch Cake with Caramel Frosting
Butterscotch Cake Ingredients:

2 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup packed brown sugar (light or dark)

1/2 cup granulated sugar

4 large eggs

1 tablespoon vanilla extract

1 cup buttermilk

1/2 cup butterscotch chips, melted and slightly cooled (optional but enhances flavor)
Caramel Frosting Ingredients:

1/2 cup unsalted butter
-
1 cup packed brown sugar
-
1/4 cup whole milk or heavy cream
-
2 to 2 1/2 cups powdered sugar (sifted)

1/2 teaspoon vanilla extract

Pinch of salt
🧁 Instructions:
Make the Butterscotch Cake:

Prep:
Preheat oven to 350°F (175°C). Grease and flour two 8-inch or 9-inch round cake pans, or line with parchment. -
Dry Ingredients:
In a bowl, whisk flour, baking powder, baking soda, and salt. Set aside. -
Creaming:
In a large mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (3–4 minutes). -
Add Eggs & Vanilla:
Beat in eggs one at a time, then mix in vanilla extract. -
Combine:
Add dry ingredients in three parts, alternating with the buttermilk. Mix just until combined. Fold in melted butterscotch chips if using. -
Bake:
Divide batter between pans and bake for 25–30 minutes, or until a toothpick comes out clean. Cool completely before frosting.
Make the Caramel Frosting:

Cook Base:
In a saucepan, melt butter over medium heat. Stir in brown sugar and cook, stirring constantly, for 2–3 minutes until bubbly and slightly thickened. -
Add Milk/Cream:
Slowly whisk in milk or cream. Bring to a simmer, then remove from heat. Let cool for 10–15 minutes. -
Finish Frosting:
Stir in vanilla and salt. Gradually whisk in powdered sugar until smooth and spreadable. If too thick, add a splash of milk; if too thin, add more sugar.

Place one cake layer on a plate or stand. Spread a thick layer of caramel frosting on top.

Add second layer and frost the top and sides.
