1. Preheat the Oven

Preheat to 350°F (175°C).

Grease and flour a 9-inch round or square baking pan (or use parchment paper).
2. Blend the Wet Ingredients

In a blender, combine: coconut, sugar, eggs, coconut milk, oil, and vanilla.

3. Add the Dry Ingredients

Add flour, baking powder, and salt directly to the blender.

4. Bake
