1 small onion, diced (optional)

1Β½ lbs baby potatoes or red potatoes, halved or quartered

1 lb fresh or frozen green beans, trimmed

1 packet (1 oz) dry ranch seasoning mix

2 tbsp olive oil or bacon grease

Salt and black pepper, to taste

1. Cook the Bacon:

In a large skillet or Dutch oven, cook chopped bacon over medium heat until crispy.

Remove with a slotted spoon and set aside. Leave about 1β2 tbsp of bacon grease in the pan.
2. SautΓ© the Onion (Optional):

If using, add diced onion to the pan and cook until softened (3β4 minutes).

Add minced garlic in the last 30 seconds, if desired.
3. Cook the Potatoes:

Add potatoes to the pan, toss to coat in the grease, and season with a bit of salt and pepper.

Cover and cook for 10β15 minutes, stirring occasionally, until tender and golden.
4. Add Green Beans:

Stir in the green beans and about 2 tablespoons of water.
