1 cup crushed Ritz crackers (about 25 crackers)

1 cup shredded sharp cheddar cheese

½ cup finely diced onion

½ cup finely diced green bell pepper (optional)

2 large eggs, beaten

½ cup milk

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder
Topping:

½ cup ketchup

2 tablespoons brown sugar

1 teaspoon yellow mustard
Instructions:

Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

Mix ingredients: In a large bowl, combine ground beef, crushed crackers, cheese, onion, bell pepper, eggs, milk, salt, pepper, garlic powder, and onion powder. Mix until just combined.

Shape the loaf: Transfer the mixture into the loaf pan and press gently to shape.

Prepare the topping: In a small bowl, mix ketchup, brown sugar, and mustard. Spread half of it over the meatloaf.

Bake: Place in the oven and bake for 45 minutes.

Add more glaze: Spread the remaining topping over the meatloaf and bake for 15 more minutes, or until the internal temperature reaches 160°F (70°C).
