🍍 Creamy Pineapple Dessert (No Gelatin)
✅ Ingredients:

2 cups crushed pineapple (canned, in juice – drained but reserve a little juice)

1 cup heavy cream or whipping cream

1/2 cup sweetened condensed milk

200g (about 7 oz) cream cheese, softened

1/4 cup powdered sugar (adjust to taste)

1 tsp vanilla extract

Optional: Digestive biscuits/graham crackers for a base or topping

Optional garnish: Toasted coconut flakes, pineapple pieces, mint leaves
🥣 Instructions:

Prep the Pineapple:

Drain the crushed pineapple and reserve 2–3 tbsp of the juice.

If the pieces are too chunky, give them a quick chop or pulse in a food processor.

Make the Cream Layer:

In a mixing bowl, beat the cream cheese until smooth.

Add powdered sugar, vanilla extract, and condensed milk. Beat until fully combined and creamy.

In a separate bowl, whip the heavy cream until soft peaks form.

Combine:

Fold the whipped cream gently into the cream cheese mixture.

Then fold in the crushed pineapple and a little of the reserved juice for flavor.

Assemble:

Optional: Layer the bottom of a dish or cups with crushed digestive biscuits/graham crackers.

Spoon the creamy pineapple mixture on top.

Smooth the top with a spatula.

Cover and refrigerate for at least 4 hours, or overnight for best texture.
