For the Salad:

1 cup papaya or cantaloupe, diced

1 cup strawberries, halved or sliced

1 banana, sliced (add just before serving)

1 kiwi, peeled and sliced

1/2 cup seedless green or red grapes, halved

1/4 cup shredded coconut (sweetened or unsweetened)

Optional: 1/4 cup chopped fresh mint
For the Creamy Dressing:

1/2 cup plain Greek yogurt or sour cream

1/4 cup sweetened condensed milk

2 tbsp orange juice or pineapple juice

1 tsp vanilla extract

1. Prep the Fruit:
Wash, peel, and chop all fruit into bite-sized pieces. Chill in the fridge while you make the dressing.
2. Make the Creamy Dressing:
In a small bowl, whisk together Greek yogurt (or sour cream), sweetened condensed milk, juice, vanilla, and lime zest until smooth and creamy.
3. Assemble the Salad:
In a large bowl, gently mix the chopped fruit and shredded coconut. Pour the dressing over the fruit and toss lightly to coat. Add banana slices last to prevent browning.
