Rustic Fish Bowl with Bacon, Carrots & Potatoes

Ingredients:

2 fillets white fish (like cod, haddock, or tilapia)

4 slices bacon (chopped)

2 medium carrots (sliced or diced)

2 medium potatoes (cubed or sliced)

1 small onion (sliced)

2 cloves garlic (minced)

2 tbsp olive oil or butter

1/2 cup fish stock or vegetable broth

Salt & pepper, to taste

Fresh parsley or dill (for garnish)

Optional: lemon wedges for serving
Instructions:

Cook the bacon:

In a large skillet or pot, cook chopped bacon until crispy.

Remove and set aside, leaving the fat in the pan.

Sauté vegetables:

Add olive oil or butter if needed.

Add onions, garlic, carrots, and potatoes. Cook 5–7 minutes until they start to soften.

Season with salt and pepper.

Simmer:

Add the broth and cover. Simmer on medium-low for 15–20 minutes until the potatoes are fork-tender.

Cook the fish:

Nestle the fish fillets into the mixture.

Cover and cook for another 8–10 minutes (depending on thickness), until the fish is opaque and flakes easily.

Assemble the bowl:

Spoon veggies and broth into a bowl.

Top with fish and crispy bacon.

Garnish with fresh herbs and serve with lemon wedges.
