🫐 Fluffy Blueberry Biscuits
📝 Ingredients (makes 8–10 biscuits):
-
2 cups all-purpose flour
-
1 tablespoon baking powder
-
1/2 teaspoon baking soda
-
1/2 teaspoon salt
-
1/4 cup (1/2 stick) cold unsalted butter, cut into small cubes
-
3/4 cup buttermilk (plus more if needed)
-
1 tablespoon sugar (optional, for a hint of sweetness)
-
1 cup fresh or frozen blueberries (do not thaw if frozen)
Optional Glaze:
-
1/2 cup powdered sugar
-
1–2 teaspoons milk or lemon juice
👩🍳 Instructions:
-
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar if using.
-
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
-
Pour in the buttermilk and gently mix until dough just starts to come together (don’t overmix).
-
Gently fold in the blueberries. If the dough is too sticky, add a bit more flour; if too dry, a splash more buttermilk.
-
Turn the dough onto a floured surface, pat into a 1-inch thick rectangle, and cut into rounds or squares using a biscuit cutter or knife.
-
Place on the baking sheet and bake for 15–18 minutes, or until golden on top.
-
Optional: While biscuits cool slightly, whisk glaze ingredients together and drizzle over warm biscuits.
💡 Tips:
-
Cold butter = fluffy layers. You can even freeze it and grate it in.
-
Don’t overwork the dough — keep it tender.
-
Add a little lemon zest to the dough for extra brightness.
