Fresh Green Beans with Lime & Garlic (Pico de Gallo Style)
Ingredients:

1 lb fresh green beans (trimmed and halved)

1 tbsp olive oil
-
2 cloves garlic (minced)
-
Juice of 1 lime
-
Zest of ½ lime
-
Salt and pepper to taste
-
Optional: pinch of chili flakes or chopped fresh jalapeño
-
Fresh chopped cilantro (for garnish)
Instructions:

Blanch the beans:

Bring a large pot of salted water to a boil.

Add the green beans and cook for 2–3 minutes until just tender but still crisp.

Drain and immediately plunge into a bowl of ice water to stop cooking and keep the bright color.

Drain again and pat dry.

Sauté:

Heat the olive oil in a large skillet over medium heat.

Add the minced garlic and chili flakes (if using). Cook for 30 seconds until fragrant.

Add the green beans and sauté for 2–3 minutes, tossing to coat.

Season:

Remove from heat.

Add lime juice, zest, salt, and pepper. Toss well.

Garnish:

Sprinkle with fresh cilantro just before serving.

Serving Tip:
Serve these beans alongside a bowl of pico de gallo and warm tortillas or grilled proteins. You can also toss the beans into pico for a chunky, spicy bean salad.
