🌶️ Green Chile Cheese Fideo Recipe

🧂 Ingredients:

7 oz (1 package) fideo pasta (or break vermicelli/thin spaghetti into 1-inch pieces)

2 tbsp vegetable oil

1 small onion, finely chopped
-
2–3 cloves garlic, minced
-
1 cup roasted green chile, peeled, seeded, and chopped
(Use Hatch green chile for authenticity; can sub canned green chile in a pinch) -
1 (8 oz) can tomato sauce

2 cups chicken or vegetable broth
-
1 tsp ground cumin
-
Salt and pepper, to taste

1 ½ cups shredded cheese, such as cheddar, Monterey Jack, or a blend
-
Optional garnishes: chopped cilantro, sour cream, lime wedges
🍳 Instructions:

Toast the Fideo:

In a large skillet, heat the oil over medium heat.

Add the fideo and toast until golden brown, stirring often (about 3–4 minutes). Be careful not to burn.

Sauté Aromatics:

Add the chopped onion and cook until softened, 3–5 minutes.

Stir in the garlic and cook for 1 minute more.

Add Sauce & Simmer:

Pour in the tomato sauce, broth, chopped green chile, and cumin.

Stir to combine and bring to a simmer.

Cook the Pasta:

Reduce heat to low, cover, and cook for 10–12 minutes, or until the pasta is tender and most of the liquid is absorbed.

Stir occasionally to prevent sticking. Add a splash more broth if it dries out too fast.

Add Cheese:

Once pasta is cooked, turn off the heat.

Stir in shredded cheese until melted and creamy.

Taste and season with salt and pepper.
