Ingredients:
For the Sponge Cake:
-
2 large eggs
-
1/2 cup all-purpose flour
-
1/4 cup sugar
-
1/4 teaspoon vanilla extract
-
1/4 teaspoon baking powder
-
A pinch of salt
For the Mango Gelatin Layer:
-
1 1/2 cups mango puree (fresh or canned)
-
1 cup water
-
2 tablespoons sugar (optional, depending on the sweetness of your mango puree)
-
1 packet (about 7g) unflavored gelatin powder
-
1 tablespoon lemon juice (optional)
Instructions:
1. Make the Sponge Cake:
-
Preheat your oven to 350°F (175°C). Grease and flour a small round cake pan (about 8 inches).
-
In a bowl, beat the eggs and sugar together until light and fluffy. This should take about 3-4 minutes.
-
Sift the flour, baking powder, and salt into the egg mixture. Gently fold the dry ingredients into the wet mixture using a spatula.
-
Add the vanilla extract and mix gently.
-
Pour the batter into the prepared cake pan and bake for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
-
Let the sponge cake cool completely in the pan before transferring it to a plate.
2. Make the Mango Gelatin Layer:
-
In a small saucepan, combine the water and sugar. Heat it over medium heat until the sugar dissolves.
-
Remove the saucepan from heat and sprinkle the gelatin powder over the warm water. Stir until the gelatin dissolves completely. Let it cool slightly.
-
In a blender, puree the mango (if using fresh mango, peel and chop it before blending). You should get about 1 1/2 cups of mango puree.
-
Mix the mango puree with the gelatin mixture. Add the lemon juice for a slight tang, if desired.
-
Allow the mango-gelatin mixture to cool to room temperature.
3. Assemble the Dessert:
-
Cut the cooled sponge cake into the desired shape or leave it as a whole layer at the bottom of a serving dish.
-
Pour the mango-gelatin mixture over the cake, ensuring it’s evenly covered.
-
Place the dessert in the refrigerator for at least 3-4 hours, or until the gelatin has set completely.
4. Serve:
Once the Mango Sponge Gelatin has set, slice and serve chilled. It’s a refreshing and light dessert perfect for warm days!
