Mini Doughnuts (Baked or Fried)
Ingredients (Makes ~24 mini doughnuts):

1 cup (125g) all-purpose flour

1/3 cup (65g) sugar

1 tsp baking powder

1/4 tsp salt

1/2 cup (120ml) milk

1 egg
-
1 tbsp melted butter or oil

1/2 tsp vanilla extract
Optional for coating:

1/2 cup sugar + 1 tsp cinnamon (for cinnamon sugar coating)

Powdered sugar (for dusting)

Melted chocolate or glaze (for dipping)
Option 1: Baked Mini Doughnuts (using a mini doughnut pan)

Preheat oven to 175°C (350°F) and lightly grease the mini doughnut pan.

In a bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, mix the milk, egg, melted butter, and vanilla.

Combine wet and dry ingredients — don’t overmix.

Spoon or pipe the batter into the mini doughnut pan (fill about 2/3 full).

Bake for 8–10 minutes or until lightly golden and springy.

Let cool slightly, then roll in cinnamon sugar or glaze.
Option 2: Fried Mini Doughnuts

Make the same batter.

Heat oil in a deep pan to about 170–180°C (340–355°F).

Drop small spoonfuls of batter into the oil (or pipe into circles onto parchment, then transfer).

Fry 1–2 minutes per side until golden brown.

Remove and drain on paper towels.

Roll in cinnamon sugar or dust with powdered sugar.
Glaze Option:
Mix 1 cup powdered sugar + 2–3 tbsp milk + a splash of vanilla for a simple glaze. Dip cooled doughnuts and let set.
