Ingredients:
-
2 ½ cups granulated sugar
-
1 cup evaporated milk
-
½ cup unsalted butter
-
1 teaspoon vanilla extract
-
2 cups pecans (halves or chopped)
-
1 cup miniature marshmallows
Instructions:
-
Prepare a pan: Line a baking dish (8×8-inch or similar) with parchment paper or lightly grease it.
-
Cook the mixture: In a heavy saucepan over medium heat, combine sugar, evaporated milk, and butter. Stir constantly and bring to a soft boil.
-
Reach soft-ball stage: Cook until the mixture reaches 236°F (113°C) on a candy thermometer. (If you don’t have a thermometer, drop a little into cold water—it should form a soft, pliable ball.)
-
Add vanilla & pecans: Remove from heat and stir in vanilla extract and pecans.
-
Mix in marshmallows: Stir until the marshmallows melt and create a creamy texture.
-
Set the candy: Pour the mixture into the prepared dish, spreading it evenly. Let it cool completely.
-
Cut & serve: Once firm, cut into squares and enjoy!
Tips:
✔ Use walnuts or almonds instead of pecans for variety.
✔ Add cinnamon or nutmeg for extra warmth.
