🧾 Ingredients:

4 salmon fillets (skinless preferred, ~6 oz each)

½ cup all-purpose flour

2 large eggs

1 tbsp Dijon mustard (optional, adds flavor to egg wash)

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 tsp garlic powder
-
1 tsp paprika
-
½ tsp dried parsley or Italian seasoning

Olive oil spray or 2–3 tbsp olive oil
🔥 Instructions:
1. Preheat Oven:

Preheat to 425°F (220°C).

Line a baking sheet with parchment paper or foil and place a wire rack on top (for even crisping). Lightly grease the rack.
2. Prep the Salmon:

Pat salmon fillets dry and season with salt and pepper.
3. Set Up Breading Station:

Bowl 1: Flour

Bowl 2: Eggs + Dijon (if using), beaten well

Bowl 3: Panko, Parmesan, garlic powder, paprika, parsley
4. Bread the Salmon:

Dredge each fillet in flour (shake off excess).

Dip into egg mixture.

Press into the panko-Parmesan mixture, coating well on all sides.
5. Bake:

Place breaded fillets on the prepared rack.

Lightly spray or drizzle olive oil on top for extra crispiness.

Bake for 15–18 minutes, or until coating is golden and salmon flakes easily with a fork (internal temp ~125–130°F / 52–54°C for medium).
Optional: Broil for 1–2 minutes at the end for extra crunch.
6. Serve:
