Homemade Pasta Dough

Ingredients:

2 cups (250g) all-purpose flour (or “00” flour for silkier texture)

3 large eggs

1/2 tsp salt

Optional: 1 tbsp olive oil (adds elasticity)
Instructions:

Form the dough:

On a clean surface or in a large bowl, make a mound with the flour and a well in the center.

Crack the eggs into the well, add salt and optional olive oil.

Using a fork or fingers, gradually mix the flour into the eggs until a dough forms.

Knead:

Knead the dough for about 8–10 minutes until it becomes smooth and elastic.

If it’s sticky, sprinkle in a little extra flour; if dry, wet your hands and knead.

Wrap the dough in plastic wrap or cover with a bowl and let it rest for 30–60 minutes at room temperature.

Roll out:

Divide dough into 2–4 pieces. Roll each piece thinly with a rolling pin or use a pasta machine.

Dust with flour as needed to prevent sticking.

Cut pasta:

Cut into desired shapes: tagliatelle, fettuccine, pappardelle, or use for lasagna sheets or stuffed pasta like ravioli.

Boil fresh pasta in salted water for 2–4 minutes, depending on thickness.
