Pork Chops with Caramelized Onions & Homemade Potato Mash
For the Pork Chops & Onions:
Ingredients:

2 pork chops (bone-in or boneless)

1 large onion, thinly sliced

2 cloves garlic, minced

Salt & pepper to taste

1 tsp paprika
-
1 tbsp olive oil or butter

Optional: a splash of balsamic vinegar or white wine
Instructions:

Season pork chops with salt, pepper, and paprika.

Heat oil or butter in a skillet over medium-high heat.

Sear pork chops for 3–4 minutes per side until browned. Remove and set aside (they don’t need to be fully cooked yet).

In the same pan, reduce heat to medium. Add onions and garlic. Cook until soft and golden—about 10–15 minutes. Add a splash of balsamic or wine for extra flavor.

Return pork chops to the pan. Cover and simmer for 5–10 minutes until pork is cooked through and juicy.
For the Homemade Potato Mash (“Potato Stuff”):
Ingredients:

3–4 medium potatoes, peeled and chopped

2 tbsp butter
-
¼ cup milk or cream (adjust to desired texture)

Salt & pepper to taste

Optional: garlic, chives, or shredded cheese
Instructions:

Boil potatoes in salted water until tender (about 15–20 minutes).

Drain, then mash with butter and milk. Season with salt and pepper.

Stir in extras like roasted garlic or herbs if you like.
To Serve:
Plate mashed potatoes, top with the pork chop, and spoon the caramelized onion sauce over everything. Pair with a green veg like peas, sautéed spinach, or a simple salad.
