🐖 Juicy Pork Chops with Roasted Potatoes & Vegetables
📝 Ingredients (Serves 4)
For the Pork Chops:

4 bone-in or boneless pork chops (about 1 inch thick)

2 tbsp olive oil
-
2 cloves garlic, minced
-
1 tsp smoked paprika (or regular)

1 tsp dried thyme or rosemary
-
Salt & black pepper, to taste

Optional: 1 tbsp Dijon mustard or a splash of lemon juice for extra flavor
For the Potatoes:

1.5 lbs (700g) baby potatoes or regular potatoes, cubed

1.5 tbsp olive oil
-
1 tsp garlic powder
-
1 tsp dried oregano or Italian herbs
-
Salt & pepper
For the Roasted Vegetables:

2 carrots, sliced
-
1 zucchini, chopped
-
1 red bell pepper, sliced
-
1 red onion, cut into wedges
-
Olive oil, salt, pepper, and a pinch of thyme
🔪 Instructions
Step 1: Prep the Potatoes

Preheat oven to 400°F (200°C).

Toss potatoes with olive oil, garlic powder, oregano, salt & pepper.

Spread on a baking sheet and roast for 40–45 minutes, flipping halfway.
Step 2: Season the Pork Chops

While potatoes roast, pat chops dry.

In a small bowl, mix olive oil, garlic, paprika, thyme, salt, and pepper.

Rub mixture all over the pork chops. Let them sit at room temp for 10–15 mins.
Step 3: Prep the Veggies

Toss all the chopped vegetables with olive oil, salt, pepper, and herbs.

After the potatoes have cooked for 15 minutes, add the veggies to a second tray (or same tray if space allows).

Roast veggies for about 25–30 minutes, stirring once halfway.
Step 4: Cook the Pork Chops
You can pan-sear or oven-bake the chops.
Pan-sear method (juiciest):

Heat 1 tbsp oil in a skillet over medium-high heat.

Sear pork chops 3–4 minutes per side, until golden brown and internal temp reaches 145°F (63°C).

Let rest for 5 minutes before serving.
Oven method:

Place seasoned chops on a baking sheet and bake at 400°F (200°C) for 20–25 minutes, or until done.

Broil for 2 minutes at the end if you want a nice crust.
