A Sautéed Mushroom and Broccoli Stir-Fry is a simple, healthy, and super flavorful dish! It’s quick to make, and the combination of earthy mushrooms and crispy broccoli is both satisfying and nutritious. Here’s a recipe to get it just right:
Sautéed Mushroom and Broccoli Stir-Fry
Ingredients:
- 1 tablespoon olive oil (or sesame oil for extra flavor)
- 1 medium onion, thinly sliced
- 2 cups broccoli florets (fresh or frozen)
- 2 cups mushrooms (any kind: cremini, button, shiitake), sliced
- 2 garlic cloves, minced
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon sesame oil (optional, for added flavor)
- 1 teaspoon rice vinegar (optional, for a slight tang)
- Salt and pepper to taste
- Crushed red pepper flakes (optional for heat)
- 1 tablespoon sesame seeds (optional, for garnish)
- Fresh cilantro or green onions for garnish (optional)
Instructions:
- Prep the Veggies:
- Wash and chop the broccoli into bite-sized florets.
- Clean and slice the mushrooms, and slice the onion thinly.
- Mince the garlic.
- Cook the Broccoli:
- Heat a large pan or wok over medium-high heat. Add the olive oil (or sesame oil).
- Once hot, add the broccoli florets to the pan. Sauté for 3-4 minutes, stirring occasionally, until the broccoli starts to turn bright green and gets a little crispy on the edges. If you want it more tender, add a splash of water and cover the pan for a couple of minutes to steam it a bit.
- Once done, remove the broccoli from the pan and set it aside.
- Sauté the Mushrooms:
- In the same pan, add a bit more oil if needed and throw in the sliced mushrooms. Let them cook undisturbed for a minute or two so they start to brown and release their moisture. Stir occasionally until they’re golden brown (about 5-6 minutes).
- Add Aromatics:
- Add the sliced onion and minced garlic to the pan with the mushrooms. Stir and sauté for another 2 minutes, until the onion softens and the garlic becomes fragrant.
- Combine and Season:
- Add the cooked broccoli back into the pan. Stir everything together.
- Pour in the soy sauce, sesame oil, and rice vinegar (if using). Stir to coat everything evenly. Adjust salt, pepper, and red pepper flakes to taste.
- Finish and Serve:
- Continue sautéing for another 2-3 minutes to allow the flavors to meld and the dish to heat through.
- Garnish with sesame seeds and fresh herbs like cilantro or green onions.
Tips:
- Add Protein: You can easily add tofu, chicken, or shrimp to this stir-fry for a more filling meal.
- Flavor Boost: If you like your stir-fry a little more savory, try adding a dash of hoisin sauce or oyster sauce along with the soy sauce.
- Crunchy Texture: For extra crunch, sprinkle some crushed peanuts or cashews on top right before serving.
This dish is a perfect side or can even be a light main dish with a bowl of rice or noodles. It’s fresh, full of flavor, and can be easily customized to your tastes. How do you usually like your stir-fries—spicy, sweet, or a bit of both?
