Classic English Scones
Ingredients:

2 cups (250 g) all-purpose flour

1/4 cup (50 g) granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

6 tablespoons (85 g) cold unsalted butter, cut into cubes

2/3 cup (160 ml) whole milk (plus extra for brushing)

1 large egg
-
1 teaspoon vanilla extract (optional)

Optional: 1/2 cup dried fruit (raisins, currants, or chopped dates)

Preheat oven:
Heat to 400°F (200°C). Line a baking sheet with parchment paper. -
Mix dry ingredients:
In a large bowl, whisk together flour, sugar, baking powder, and salt. -
Cut in the butter:
Add cold butter cubes and cut in using a pastry cutter or fingertips until the mixture resembles coarse crumbs. -
Add wet ingredients:
In a small bowl, whisk milk, egg, and vanilla. Pour into dry ingredients. Mix gently until just combined. Do not overmix. -
Shape the dough:
Turn dough onto a lightly floured surface and pat into a 1-inch (2.5 cm) thick round.
Cut into circles with a floured biscuit cutter or a glass. Gather scraps and repeat. -
Bake:
Place scones on the baking sheet. Brush tops with milk for a golden finish.
Bake for 12–15 minutes, until risen and lightly golden. -
Cool & serve:
Let cool slightly. Serve warm with clotted cream, jam, or butter.
🍓 Variations:

Cheddar & chive: Omit sugar, add 1 cup shredded cheese + 2 tbsp chopped chives.

Lemon & blueberry: Add 1 tsp lemon zest and 1/2 cup blueberries.
