🥪 Smoked Brisket Grilled Cheese Stack
Ingredients (for 2 big stacks):

4 slices of thick-cut sourdough or brioche bread

1½–2 cups smoked brisket (shredded or sliced thin)

1 cup sharp cheddar cheese (shredded)

1 cup mozzarella or Monterey Jack cheese (shredded)

4 tbsp butter (softened)

2 tbsp mayonnaise (optional, for extra golden crust)

1 tbsp BBQ sauce (optional, for tang)

Pickled red onions or jalapeños (optional, for topping)

Fried egg (optional, for extra richness)
Instructions:
1. Warm the Brisket:

If cold, reheat the smoked brisket gently in a pan or microwave with a splash of BBQ sauce or beef broth to keep it moist.
2. Prepare the Bread:

Mix butter and mayo (optional) and spread on one side of each bread slice.

Place the slices butter-side down.
3. Layer the Stack:

On two slices (unbuttered sides facing up), add:

A layer of cheddar

A generous amount of brisket

Mozzarella or Monterey Jack

(Optional) BBQ sauce drizzle and pickled toppings

Top with the remaining bread slices (buttered side facing out).
4. Grill It:

Heat a skillet or griddle over medium-low heat.

Cook each sandwich 4–5 minutes per side, pressing down slightly, until golden brown and the cheese is melted.

For extra thickness, you can stack two grilled sandwiches on top of each other (use a skewer or cut in halves for presentation).
