🥧 Southern-Style Peach Cobbler

For the Peach Filling:

6–8 fresh peaches, peeled, pitted & sliced (or 2 cans of sliced peaches, drained)

1 tbsp lemon juice

1 tsp vanilla extract

2 tbsp cornstarch (only if using fresh peaches)

2 tbsp butter (for dotting over peaches)
For the Batter:

1 cup all-purpose flour

1 cup granulated sugar

1 tbsp baking powder

¼ tsp salt

1 cup whole milk

½ cup (1 stick) unsalted butter, melted

1. Preheat the Oven

Preheat oven to 375°F (190°C).
2. Prepare the Peaches

Fresh Peaches: In a saucepan, combine sliced peaches, both sugars, cinnamon, nutmeg, lemon juice, and cornstarch. Simmer over medium heat for 8–10 minutes until syrupy and softened. Add vanilla and stir.

Canned Peaches: Combine the peaches with sugar, cinnamon, and nutmeg. No need to cook — just mix well and set aside.
3. Make the Batter

In a mixing bowl, combine flour, sugar, baking powder, and salt.

Stir in milk until just combined.

Pour melted butter into a 9×13-inch baking dish. Pour the batter over the butter (do not stir) — the butter will rise around the batter during baking.
4. Assemble the Cobbler

Spoon the peach mixture evenly over the batter. Again, do not stir.

Dot the top with small pieces of butter (optional but adds richness).
5. Bake

Bake for 40–45 minutes, until the top is golden brown and a toothpick inserted in the batter comes out clean.
