👨🍳 Method:
1. Make the Steak Filling (can be done ahead):
-
Heat oil in a heavy pan. Brown the beef in batches and set aside.

In the same pan, sauté onions until soft, add garlic, cook 1 minute.
-
Return beef to pan. Stir in flour and cook for 1 minute.
-
Add beef stock, Worcestershire sauce, thyme, salt, and pepper.

Simmer gently for 1.5 to 2 hours, until beef is tender and the sauce thickens.
2. Assemble the Pie:
-
Preheat oven to 200°C (400°F).
-
Spoon the beef filling into a pie dish.
-
Cover with puff pastry, trim edges, and crimp.
-
Brush with beaten egg.
-
Bake for 25–30 minutes until golden and puffed.
3. Make the Mash:
-
Boil potatoes until soft (about 15–20 mins).
-
Drain and mash with butter and milk/cream.
-
Season with salt and pepper.
4. Heat the Beans:
-
Gently warm beans in a saucepan over low heat.
5. Make the Gravy:
-
In a saucepan, melt butter or drippings.
-
Stir in flour, cook 2 minutes to make a roux.
-
Slowly whisk in beef stock.
-
Simmer until thickened, season to taste.
