Ingredients
For the peach base:

3 cups fresh peaches, peeled and sliced (or use canned, drained)

1 cup all-purpose flour

1 cup granulated sugar

2 tsp baking powder

½ tsp salt

½ cup milk

2 tbsp unsalted butter, melted

1 tsp vanilla extract
For the topping:

1 cup granulated sugar

1 cup brown sugar (packed)

1 tbsp cornstarch

2 cups boiling water

2 tbsp unsalted butter
Instructions

Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Layer the peaches in the bottom of the dish.

Mix the batter: In a bowl, combine flour, sugar, baking powder, and salt. Add milk, melted butter, and vanilla. Stir until smooth. Pour this over the peaches — it’ll spread out as it bakes.

Prepare the topping: In a separate bowl, mix the white sugar, brown sugar, and cornstarch. Sprinkle this evenly over the batter.

Add boiling water: Slowly pour the 2 cups of boiling water over the entire dish (do not stir). Dot with the 2 tbsp of butter.
