🍅 Tomato Soup
Ingredients:

2 tbsp olive oil or butter

1 medium onion, finely chopped

2 garlic cloves, minced

2 x 400g (14 oz) cans of chopped tomatoes (or 1 kg fresh ripe tomatoes, chopped)

500 ml (2 cups) vegetable or chicken stock

1 tsp sugar (optional, to balance acidity)

Salt & pepper to taste

1 tsp dried basil or thyme (optional)

100 ml (1/2 cup) heavy cream or milk (optional, for creaminess)
Instructions:

Heat olive oil in a pot over medium heat.

Add chopped onion and cook until soft and translucent (5–7 minutes).

Stir in tomatoes, stock, sugar, herbs, salt and pepper.

1 tsp mustard (optional, for tang)

Butter for spreading

Salt and pepper
Instructions:
