Ingredients:
For 2 servings:
For the whale steak:

2 whale steaks (approx. 200g each)

Salt and pepper to taste

1 tbsp butter or oil for searing
For the onion & cream sauce:

1 large onion, thinly sliced

1 tbsp butter

150 ml heavy cream
-
1 tsp Dijon mustard (optional, for depth)

Salt and pepper to taste

A splash of white wine or lemon juice (optional)
🔪 Instructions:
1. Prepare the Whale Steaks:

Pat steaks dry and season with salt and pepper.

Heat a heavy skillet over medium-high heat.

Add butter or oil, and sear steaks for about 1.5–2 minutes per side (medium-rare to medium).

Whale meat is lean, like beef, and overcooks easily—treat it like venison or liver.

Remove from pan and rest under foil.
2. Make the Onion & Cream Sauce:

In the same pan, add a bit more butter.

Sauté onions over medium heat until soft and golden (about 10 minutes).

Add white wine or a dash of lemon juice to deglaze (optional).

Stir in the cream and mustard (if using), and simmer until slightly thickened (3–5 minutes).

Season with salt and pepper.
3. Serve:

Slice whale steak across the grain.

Plate with cream sauce and onions over the top.

Optional sides: Boiled potatoes, mashed root vegetables, or rye bread.
